Union Hotels Crème Brulee Recipe

100g Caster Sugar
1 Vanilla Bean
10 Egg Yolks
100g Caster Sugar extra
1.Preheat oven to 110 degrees C.
3.Place Cream in a pot.
4.Halve the vanilla beans and scrape out the seeds. Add seeds and beans to the cream and bring to the boil, then turn off.
5.AWhisk yolks and sugar together until thick and pale.
6.Add cream to yolk, mix and whisk until combined. Then strain.
7.Gently pour mix into brulee dishes and place in a tray.
8.Half fill the tray with water, make sure you don’t get any water in the burlee dishes.
9.Place in oven and cook for 20-25 minutes.
10.Pull tray out and take dishes out of the water. Refiidgeate until set.
11.To serve, cover with the extra caster sugar (evenly spread) and lighly brown with gas torch until golden in colour. Leave for 1-2 minutes until sugar sets.
You know the brulees are cooked correctly when you tap th dish and it is still slightly wobbly in the centre.
