Union Hotels King Fish Recipe

200g Kingfish Fillet, Skin On
2 x Tomatoes – deseeded
2 x Pitted Kalamata Olives – chipped
10g Baby capers
1 Spanish Onion – 1/2 diced, 1/2 sliced
1/2 bunch Parsley
3 x Chat potatoes – boiled
20g Grain Mustard
1 tsp White Wine Vinegar
100ml extra virgin olive oil
Salt & Pepper
To make the salsa
1.finely dice tomatos, half of spanish onion and parsley.
2.Mix tomato with Olives, onion and 1/2 of parsley and add capers.
3.Add 1 tbs Olive Oil and seasoning.
For the Potato Salad
2.Add the rest of the parsley, white wine vinegar, sliced onion, mjstart, 1 tbs olive oil and seasoning.
To cook the Kingfish
1.Preheat oven to 190 degrees C.
2.Heat pan with the rest of the olive oil (You will know when the pan has reached the desired temp when the oil starts to smoke).
3.Season fish, place in pan skin side down.
4.Seal skin for minutes and then place in oven for 4 minuets, then turn over for another 3 minutes.
5.While the fish is cooking assemble the potato salad on the plate and have the salsa ready.
6.Check the fish is cooked, by making a small incision with a knife a the thickets part of the flesh.
7.Place the fish on the plate and dress with salsa.
It is important that the salsa and potato salad are prepared before cooking the fish.
